This project aims to understand the multisensory interactions that influence tasting by combining cognitive science, psycholinguistics, and artificial intelligence. It will investigate how multisensory interactions—taste, smell, sight, and touch—shape perception and tasting. The project will examine how expertise influences flavor description, memory, and sensory dominance. It will develop a framework for the cognitive representation of flavors during tasting experiences using AI‑based tools. Finally, it will provide scientific recommendations for optimizing tasting experiences for gastronomy professionals.
